Simple Enchilada Recipe

Here is a yummy recipe that most of my family loves~ yes, I have a couple of picky kiddos. But, this recipe is one of my hubby's favorite. I started making this when we were just dating, which is forever ago & he will still request it! It's a little on the spicy side, you can tame it down a bit by using a mild enchilada sauce & omitting the Rotel.

 What you need: Cooked chicken breast or cooked ground beef, shredded cheese, 1 can of Rotel, 1 can of cream of mushroom soup, 1 can of your favorite enchilada sauce, one can of tomato sauce. (I used a large can, because I was serving a crowd), *flour or corn tortillas.


*I prefer corn tortillas, but they are a bit more labor intense. Up to you though!



1st: Dice or shred cooked chicken & place in a large bowl & add can of Rotel & add as much cheese as your heart desires. Stir.



2nd: Set meat mixture aside.

It's sauce time: Mix soups, enchilada sauce in a bowl.



Now: Pour the sauce, just enough to cover bottom of a greased cake or casserole pan.


Almost there...wait for it...
Fill your tortilla shells with meat mixture and wrap and place on top of enchilada sauce.


Now: Pour remaining sauce on top of enchiladas & top with remaining shredded cheese. Bake uncovered for 25-30 min at 375 degrees.


Wallah! Yummy and simple enchiladas!

 As always, you can healthy this recipe up by using low fat soups & cheese.
